Sher Wagyu M8-9 Inside Skirt
Sher Wagyu Australian Purebred Wagyu Inside Skirt (MB8-9)
Cut Overview:
Sourced from Sher Wagyu, Australia’s pioneer Wagyu producer established in 1991, celebrated globally for pristine Tajima Wagyu bloodlines.
Finished on a traditional Japanese-style long-fed grain ration for over 400 days to achieve an extraordinary Marble Score 8-9 (MB8-9) specification.
Harvested from the interior abdominal diaphragm wall. It represents the holy grail of high-end Japanese Yakiniku, combining intense primal beefiness with extravagant Wagyu marbling.
Flavor & Texture Profile:
Flavor Profile: Dispels the notion that Wagyu lacks natural beef flavor. The ultra-low rendering point of MB8-9 tallow liquefies instantly, delivering an intoxicating aroma of sweet toasted butter, roasted hazelnuts, and deep, mineral-rich beef umami.
Texture Profile: Coarse, open-grained muscle bundles are thoroughly softened by the dense network of snowflake fats. Searing yields a caramelized, crackling crust wrapping around a velvety, springy core that bursts with rich savory juices upon every chew.
Culinary Applications: Extreme thermal resilience and lipid saturation make it the undisputed centerpiece for Japanese Tokujyo Yakiniku, thick-cut izakaya steak bites, high-heat cast-iron searing, or open-flame robata grilling.
Cooking Tips:
Screaming-Hot Flash Sear: Pat the surface completely dry. Sear across a smoking-hot skillet or charcoal grill with strictly zero added cooking oil for 60 to 90 seconds per side, targeting strictly Medium-Rare to Medium doneness to preserve its luscious moisture.
Slice Across the Grain (Essential): Rest on a warm plate for 3 to 5 minutes. Always slice perpendicular (against) the visible muscle grain into thick ribbons to completely shear the fibers into melt-in-the-mouth tenderness.
Note: Hand-portioned and artisan-trimmed of heavy connective tissues inside our licensed facility from imported primals. Natural variations in cut length, thickness, and marbling are entirely normal.
